Recipe: Chocolate Fudge Chunk Cookies

Everyone loves a good cookie, but this recipe isn't for any old cookie. This recipe will create a beautifully chewy cookie, which has chocolate and fudge chunks in and will only take about 10 minutes to make it and 10 minutes to bake it.


125g softened butter
125g caster sugar
100g light brown sugar
1 tsp vanilla extract (I use Madagascan Vanilla, yum!)
1 egg
225g self-raising flour
1/2 tsp salt
100g fudge chunks (optional)
100g chocolate chunks (optional)

Did you know? If you don't have self-raising flour, you can use plain flour and baking powder. For this recipe, use 225g of plain flour and 2 tsp of baking powder.


Preheat the oven to 180°, which is Gas Mark 4. 

Cream the butter and sugars together in a bowl.

Add the egg and the vanilla.

Sift the flour into the mixture.

Add the salt.

Add the chocolate and fudge.

Spoon onto a baking tray, lined with baking paper, into little balls and flatten slightly. Make sure they're not too close together.

Bake for 8-10 minutes. If you want a really chewy cookie, take them out of the oven just before they look ready and leave them for a few minutes to set.

Transfer to a cooling rack, if there's any left.

I must say, these cookies are best enjoyed warm. Then again, I don't think I waited long enough for them to cool down for me to compare it to eating them cold.

So, I may think you're a little strange if you don't want chocolate and fudge chunks in your cookies, but you can bake these without. Or, why not try adding other ingredients like raisins or just chocolate, just fudge or try some nuts. Let us know what variations you come up with in the comments section below.
